Dubai Chocolate, Decoded: Why Pistachio Knafeh Took Over the World

From a TikTok in a Dubai grocery store to your gift box — here’s the real story behind the viral pistachio kunafa chocolate, and how we made it luxurious enough for a Medjool date.

Dubai Chocolate, Decoded: Why Pistachio Knafeh Took Over the World

In 2024 a single TikTok of a pregnant influencer biting into a green-filled, gold-painted chocolate bar in Dubai broke the internet. Pistachio kunafa chocolate exploded — supermarkets sold out, knock-offs flooded Instagram, and "Dubai chocolate" became one of the most-searched dessert terms of the year.

What is it, really?

The original Fix Dessert Chocolatier bar layered three things: tempered milk chocolate, a soft pistachio cream, and crispy shredded kunafa (a Middle-Eastern cheese-pastry traditionally soaked in rose syrup). The textural contrast — silky, then nutty, then crunchy — is the magic.

How we adapted it

A bar is one thing. A *date* is another. The pillow-soft Medjool gives the chocolate something to hold, the kunafa something to crunch against, and the pistachio cream a vehicle for sweetness without becoming cloying. It’s the same trinity — but reimagined as a single, two-bite jewel.

Why ours tastes different

Most “Dubai chocolate dates” you’ll find on Instagram skip steps. We don’t. Our kunafa is hand-shredded and pan-toasted in clarified butter daily — never bagged. Our pistachio is from Sicily, ground to order. Our chocolate is tempered (see [our 8-hour temper article](/blog/perfect-8-hour-chocolate-temper)).

It’s the most ordered piece in our atelier. It is the reason most customers find us. And it remains, in our humble opinion, the single best way the trend has ever been served.
