Why Medjool Dates Are the Diamond of the Dessert World
Not all dates are created equal. Here’s why we hand-select only Premium Medjool — the “King of Dates” — for every single piece we make.
If chocolate is the velvet curtain of our atelier, the Medjool date is the diamond beneath it. Plump, soft, caramel-honeyed, and almost impossibly delicate — it’s the only date variety we trust to carry the weight of our fillings.
What makes Medjool different
Most dates you find in grocery aisles are Deglet Noor — firm, drier, often used for baking. Medjool, by contrast, is the *Cadillac of dates*. Larger, softer, with a fudgy, near-toffee texture and natural caramel notes that pair perfectly with chocolate, pistachio, and crushed peanut.
Where ours come from
We source exclusively from California’s Coachella Valley and the Jordan Valley — the two regions producing the world’s most prized Medjool harvests. Each crate is hand-graded; we use only Jumbo and Super Jumbo grade fruit, which we then split, pit, and stuff by hand.
The luxury difference
Walk into a corner store and you’ll see dates priced at $4 a pound. Premium Medjool starts at $14 a pound and only goes up. The difference is the same as cubic zirconia versus a real diamond — close enough at a glance, worlds apart in the mouth.
Why this matters for gifting
